Step 1: Prepare the 4 chicken breasts by pounding them to an even thickness of about 1/2 inch. Season each breast with salt and pepper.
Step 2: Dredge the chicken: Set up three shallow dishes. Put 1/2 cup flour in one, beat 2 eggs in another, and mix the 1 cup breadcrumbs with 1 cup Parmesan in the third. Coat each chicken breast in flour, dip into the beaten eggs, then dredge in the breadcrumb mixture, pressing to coat.
Step 3: In a large skillet, heat 1 cup olive oil over medium-high heat. Fry the chicken until golden brown on both sides, about 4 minutes per side. Remove from skillet and drain on paper towels.
Step 4: Preheat oven to 400 degrees F (200 degrees C). Spread 1 cup marinara sauce on the bottom of a baking dish. Place the fried chicken on top. Cover with more (1 cup) marinara sauce, then sprinkle with 1 cup mozzarella cheese.
Step 5: Bake in the preheated oven until the cheese is bubbly and golden, about 20 minutes. Garnish with fresh basil before serving.
